Raw honey is unheated and unfiltered, so its enzymes, pollen, and antioxidants stay intact. Processed honey is heated above 40°C, which destroys most of what makes honey useful.
Raw honey has a lower glycaemic load than refined sugar and is a cleaner sweetener. It's not a treatment for diabetes — please follow your doctor's advice if you are diabetic.
Store at room temperature, away from direct sunlight. Crystallisation is normal and a sign of purity (CSIR-IHBT validated). Use 1 teaspoon in warm water, on toast, or in tea.
