    India's Food Adulteration Problem

    Food adulteration — the addition of inferior, cheaper, or harmful substances to food — is a persistent public health issue in India. FSSAI enforcement has improved significantly since 2011, but adulteration remains widespread in both branded and unbranded products. Understanding the most common adulterations protects you and your family.

    Most Commonly Adulterated Foods

    Honey

    Sugar syrup (rice syrup, inverted sugar) adulteration affects an estimated 50–77% of commercial honey in India. Modern adulterants are designed to pass standard C4 sugar tests. Only NMR spectroscopy reliably detects them.

    Milk and Dairy

    Water dilution is the most common; detergent, urea, and formalin are less common but documented. Synthetic milk (made from urea, detergent, and refined oil) was documented in multiple states. FSSAI's annual surveillance consistently finds milk adulteration in 5–8% of samples.

    Spices

    • Turmeric — lead chromate (metanil yellow) added for colour; causes neurotoxicity. Test: add concentrated HCl — yellow colour turns pink/magenta if lead chromate is present.
    • Chilli powder — brick dust, sawdust, artificial dyes (Sudan Red, Rhodamine B)
    • Black pepper — papaya seeds (visually identical when dried and powdered)

    FSSAI's 2022-23 annual report found that 12% of spice samples tested across India had non-permissible colourants or adulterants. Turmeric and chilli powder had the highest failure rates. Whole spices (not powdered) have significantly lower adulteration rates — grinding your own is the most reliable protection.

    Oils and Fats

    • Mustard oil — often adulterated with argemone oil (causes epidemic dropsy); test: add conc. H₂SO₄ — red colour indicates argemone
    • Olive oil — regularly adulterated with cheaper oils (sunflower, soybean) in most markets
    • Ghee — vanaspati, palm oil, tallow additions are common

    Simple Protections

    • Buy whole foods and grind or process at home where possible
    • Choose certified brands with FSSAI license numbers you can verify
    • Look for third-party lab testing disclosure
    • Report suspected adulteration to FSSAI: 1800-11-4000 (toll-free)
