    A 2020 investigation by the Centre for Science and Environment (CSE) found that 77% of branded honey samples sold in India contained sugar syrup adulteration — including major retail brands. The most common adulterant is rice syrup or inverted sugar syrup, which passes standard NMR spectroscopy tests. Only Nuclear Magnetic Resonance (NMR) testing can reliably detect modern adulteration.

    At-Home Tests (Indicative, Not Definitive)

    • Water test — pure honey dropped into a glass of water settles to the bottom without dissolving. Adulterated honey dissolves rapidly. Note: this test has many false positives and is unreliable for dilute adulterants.
    • Thumb test — a drop of pure honey placed on your thumb should stay in place; adulterated honey spreads or drips due to higher water content
    • Flame test — pure honey ignites when a matchstick dipped in honey is struck; adulterated honey with high water content does not. Handle with extreme caution.
    • Bread test — spread on bread, pure honey will harden it within a few minutes. Commercial honey with added water will soften the bread.

    All at-home tests are inconclusive for modern adulterants like rice syrup or inverted C3/C4 sugar syrups. These adulterants are designed specifically to pass visual and basic chemical tests. The only reliable verification is NMR spectroscopy, which measures the specific carbon isotope ratios of genuine honey vs added sugars.

    What Genuine Raw Honey Looks Like

    • Crystallises — pure raw honey crystallises at room temperature within weeks to months (depending on floral source). Honey that never crystallises has been heat-treated or adulterated with anti-crystallisation syrups.
    • Has a complex flavour profile — floral, slightly acidic, with depth. Commercial adulterated honey tastes flat and uniformly sweet.
    • Varies by season and source — genuine wildflower or jungle honey will have different colour and flavour from batch to batch. Uniform honey across years is a processing indicator.
    • Has a lower moisture content — pure honey has less than 20% moisture. Above 20%, fermentation risk increases and the honey has typically been watered down.

    Questions to Ask Your Honey Supplier

    • What is the floral source and harvest location?
    • Is NMR testing done? Can you share the report?
    • What is the processing temperature?
    • Is the honey raw (under 40°C) or pasteurised?
