Why Millets Are India's Original Superfood
Millets — bajra (pearl millet), jowar (sorghum), ragi (finger millet), foxtail millet, little millet — were the staple grains of India for centuries before wheat and rice dominance. They are nutritionally superior to refined wheat in almost every measure: higher protein, higher fibre, lower glycaemic index, and richer in minerals including iron, calcium, and magnesium. The shift back to millets is not a trend — it is a return to a food system that worked.
Simple Daily Millet Recipes
Ragi Dosa
2 cups ragi flour + 1 cup urad dal (soaked 6 hours and ground) + salt + water to thin batter consistency. Ferment overnight. Cook on a hot tawa. Ragi is the richest plant source of calcium in the Indian diet (344mg per 100g), and fermentation increases bioavailability further. Serve with coconut chutney and sambar.
Bajra Khichdi
Soaked pearl millet + moong dal + water 1:4 ratio + ghee + cumin, turmeric, asafoetida. Cook in a pressure cooker for 4 whistles. Bajra's high iron and magnesium content makes it particularly valuable in winter when iron-deficiency anaemia risk increases. The combination with dal provides complementary amino acids for complete protein.
Foxtail Millet Upma
Dry roast foxtail millet until fragrant. Sauté onion, green chilli, curry leaves, mustard seeds in ghee. Add millet + water (1:2) + salt + vegetables (peas, carrot, tomato). Cook covered 8–10 minutes. Foxtail millet has the lowest glycaemic index of the millets (50–54), making it excellent for blood sugar management.
A 2021 systematic review of 19 studies (Frontiers in Nutrition) found millet consumption consistently reduced fasting blood glucose, post-meal glucose, and HbA1c across all millet types studied. The effect was most pronounced with finger millet (ragi) and foxtail millet — both traditional staples in South and Central India.
Jowar Roti
Jowar (sorghum) flour + warm water. Knead to soft dough. Roll thick on a damp cloth (gluten-free, so it won't roll thin without cracking). Cook directly on flame or on tawa. Jowar's antioxidant profile — including policosanol and 3-deoxyanthocyanidins — is not found in wheat or rice. Spread with A2 ghee before serving.
